Banana Chili
Banana Chili
Ingredients:
4 ripe bananas (sliced)
1 large onion (diced)
4 cloves garlic (minced)
2-3 chili peppers (chopped)
1/4 cup fresh cilantro (garnish)
2 tablespoons olive oil
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper
2 cups vegetable broth
1 can black beans (drained and rinsed)
Prep:
1. Begin by slicing the 4 ripe bananas into bite-sized pieces and set them aside.
2. Finely chop 1 large onion and mince 4 cloves of garlic.
3. Remove the stems and seeds from 2-3 chili peppers and chop them into small pieces, adjusting the number based on your heat preference.
4. Rinse and drain 1 can of black beans and prepare 1/4 cup of fresh cilantro by roughly chopping it.
Cooking:
1. In a large pot, heat 2 tablespoons of olive oil on medium heat.
2. Add the chopped onion and sauté for 3-4 minutes until translucent.
3. Add the minced garlic and chopped chili peppers, stirring for 1-2 minutes.
4. Sprinkle in 1 teaspoon each of cumin and paprika, along with 1/2 teaspoon of salt and black pepper, stirring to combine the spices with the aromatics.
5. Add 2 cups of vegetable broth and gentley simmer.
6. Evenly mix in black beans and sliced bananas.
7. Simmer for 15-20 minutes, or until bananas are soft
Serving:
1. Once the chili has cooked, taste and adjust seasoning if needed.
2. Serve the Banana Chili hot in bowls, garnished with freshly chopped cilantro.
